This was a friend's recipe that I tried and fell head over heels for. It's easy, delicious, healthy, affordable, helps clean out the pantry and when done in the crock you just set and forget it:
Into your crock pot (or pot if your simmering on the stove) add:
26 oz. chicken stock
2 cans stewed tomatoes, with juice (broken up into pieces by hand)
2 cans diced tomatoes, with juice
1 dinner-ready rotisserie chicken from the grocery store (piece-picked off the carcass)
2-3 cloves garlic, minced
1/2-1 onion, diced
Cans of Vegetables, drained (whatever you like/have on hand. I used sliced new potatoes, corn, sweet peas, green & wax beans and navy beans.)
Season to taste. I added salt, pepper and dried basil since the stewed tomatoes already had a great flavor.
Mix everything together. In the crock pot it's easier to mix gently with your hands as the above ingredients literally filled my pot to the rim. Everything is cooked so you're just heating and letting the flavors mellow. With the raw onions it's best to cook/simmer for a few hours to let it soften and help flavor. This is one of those recipes that gets better and better every day.
