oh so yummy. things ya need...

-one egg
-about a 2/3 cup of chopped peanuts
-1/2 box (8oz) rice noodles
-2 scallions chopped
-about a 1/4 cup of pad thai sauce. comes in a jar at most stores that have an oriental food section
-couple lime wedges
-fresh bean sprouts
-chicken or shrimp (optional)
-a wok, or big frying pan
-4 tbsp veggie oil
-sprig of celantro (garnish)

first thing you want to do i soak the rice noodles in water. about 20 minutes should do it. makes sure the pan is big enough for them to lay flat. they need to be limp, but still firm.

heat up the wok with 2 tnsp of veggie oil in it. let it get nice and hot. once it's ready, add the egg. scramble it for about 1 minute. add any shrimp or meat now if you are using meat. stir fry until cooked through.

add the rest of the veggie oil. add rice noodles. stir fry 4-7 minutes. until noodles are firm, but tender. add scallions, pad thai sauce and peanutes. stir fry for about 1 minute.

put it in a bowl. or whatever you are going to serve/eat it out of. top with bean sprouts. here is a matter of taste, i like alot of bean sprouts, but you could also forgore them if ya choose. serve hot with lime wedges as garnish.

easy to make, and sooooo good. you can change amounts of anything in here. really, you make it to taste. (i personally leave out the cilantro) you could add less or more of anything, including the sauce.

total cooking time not including prep and noodles soaking is about 10 minutes. not bad. this is technically 2 servings, or one good size meal.

Honestly I had my mother cook this up for me and I didnt really like it. I guess people have different taste buds.

yeah, it is one of those you either hate it or love it. i, however, have yet to meet a pad thai that i didn't like. :)

Post like maybe a recipe for like a salad or a fruit bowl or something for your next one. I might actually like the next one.

YOU can always post a recipe for a salad or fruit bowl.

Pad thai is good, but not my favorite thai dish...now if i could ever remember what any of them are called BESIDES pad thai, i'd be able to get em...
