I made a claim weeks ago which incited a near riot on The Facebooks. I boasted my ability to make, maybe not the best, but a pretty ri-goddamn-diculously good grilled cheese. The ingredients are really key here. It's one of my favorite lunches to make, and I love trying new things with it. It's such a simple concept, but can be as intricate as one likes. My question is, how do you guys prepare your bread and cheese creations?

I am lactose intolerant so I do not eat the grilled cheese. I am however a bread aficionado and always make my own bread

I am not generally picky about my grilled cheese, but when I'm really in the mood for it I would prefer an all-out recipe to a lighter-fare one. Little bit of butter on the outside for that golden crunch, some mayo on the inside and plenty of really good cheddar. I also like mine with tomatoes, sometimes bacon.

Sourdough bread, cheddar(prefer Vermont white), bacon, thinly sliced apples. I prefer to get the best quality ingredients possible; I'd rather go hungry than eat something sub-par.

Grilled cheese for me is something that is more of a comfort food than a gourmet experience. If it's not the cheese singles and Wegman's bread of my childhood, it's not the same. I have, however had Darrin's grilled cheese and it's excellent. If there is anything on there besides cheese, bread, and butter it is no longer 'grilled cheese' to me. Doesn't mean you can't use amazing ingredients regardless. Try a foccacia and brie grilled cheese, or asiago and sourdough.

Thanks, dudeski. Word, I'm with Rory on the main simple staples of the sandwich, which is why I find it fun to try and make it great and different with those three items.

My current addiction and method includes fresh Italian bread, Extra sharp Cheddar, and Fresh Provolone.
A little Pepper Jack cheese is great for some bite, too!

As always, I NEED a pickle served next to this sandwich.

Interesting... a whole thread about grilled cheese. :P

Don't mock this till you try it, because you just might like it! But after making a simple grilled cheese (preferably with a white cheese, such as provolone), dip it in maple syrup! It's goood!

I prefer to make my grilled cheese with wheat bread, medium cheddar, and a slice of kosher dill pickle. That's good eatin'. I will butter the outside of the bread with cheese inside( I add pickle afterward), and pan cook it until it's nice and gooey. Hmm, wish I had the cheese and the pickle right now...I have Sarah Lee Classic Wheat bread at this time and it would be soooo perfecto..... *DROOL*

Maggie, I'd never laugh at dipping ANYTHING in maple syrup. Anyway, a Monte Cristo sandwich is usually served with Maple syrup, and since it's pretty much a fancy ham and cheese sandwich, what you're describing isn't as weird as you think.

I like mine Rory-style. Although, if I happen to have any hot dogs on hand, then I'll cook them, cut them in half, then place them in between the cheese slices.

We just went out to a rather fancy place for my mother-in-law's birthday and they served their appetizer tomato soup with tiny little finger grilled cheese sandwiches. Not sure what kind of cheese they used but what we thought was the addition of ham in there turned out to be paper-thin sliced salmon. It was actually pretty darn tasty.

I went to an over-priced Italian market on the Upper East side yesterday (God Bless New York City,) and got some killer provolone cheese. This is NOT the provolone you get from a deli counter. It's much harder, and sharper than Ben Lathan's elbow, with a sweetness and nuttiness more akin to parmesan reggiano. I melted that on some tuscan bread I got from the same place, with some turkey and mustard. Clearly not grilled cheese, but I thought it was close enough to mention here, and delicious enough to mention in any thread, but I thought it might piss people off if I randomly mentioned it in amongst comments about the last game someone bought.
